Artichoke dip
1 (14 ounce) jar artichoke hearts, in water drained and quartered
1 cup mayonnaise ( I use light)
1 cup grated Parmesan cheese (not from the green can!!!!)
1 (8 ounce) package cream cheese, softened (Also light)
1 (4 ounce) can chopped green chile peppers
2 cloves crushed garlic
3 green onions sliced
1/2 t cayenne pepper
salt and pepper
In a medium bowl, mix the artichoke hearts, mayonnaise, 3/4 cup Parmesan, cream cheese and green chile peppers, garlic, onions and seasoning. Scoop the mixture into a pie pan or medium baking pan. Top with the remaining 1/4 cup of Parmesan.
Bake for 25 minutes or until bubbly and slightly browned. Serve warm.

Is this the one you had at your cookie exchange? It seemed a little spicier,but I wanted to search before I asked....
ReplyDeletethis is it. I LOVE this dip. I could eat it by the spoonful. the cream cheese cuts through any spice if in doubt do less cayenne. i just eyeball it.
