chocolate-peanut butter- sandwiches

  At church  I am a leader to the little girls who are 8-11 years old.  twice  a month we all get together and do fun activities....  Could there be anything cuter? I love these girls they are so fun!!!
   A few weeks ago we made treats to leave as surprise on someones door step.  We have over 20 girls so we try and do fun but simple ideas.  These treats were so simple even your smaller kids can help and they were well lets say really really good.   I made sure all the leftovers were taken away so  I would not be tempted.  But then  a cute little girl brought me a whole plate. My son is allergic to peanut butter.  So like any caring, responisble mother would do I ate them all. I didn't want to chance him finding them and get sick.   Any loving mom would do it, it was for my child.  Don't judge!
   These truly are so simple and quick so if you still have room on your goodie plates for friends and neighbors these have to go on them.
  The best part is you do not even have to turn on your oven or go to the store I bet you have all the ingredients in your pantry.

  Ingredients
40 ritz crackers
1/2 cup creamy peanut butter
1 pound semi sweet chocolate chips
    Directions
    Spread peanut butter onto one cracker and top with another cracker to make a sandwich. Repeat with all the crackers. Melt chocolate I use a double boiler or in a bowl in the microwave in small increments  if the chocolate seems too thick add 1T of oil . Dip each sandwich into chocolate with a fork, tapping excess back into the bowl. Place onto wax paper to cool. Allow to set. Store between layers of wax paper. These freeze very well.

    You could change it up too different kinds of chocolate or put sprinkles on top or drizzle with chocolate.

    burrito braid

    hows your week??  A little busy...?  mine too.  If you are like me you are either preparing for company, getting last minute gifts, entertaining kids out of school. You may need ideas that are fast for dinner and kid friendly too,  you have heard enough whining all day already.   This is what we did a few days ago.  It was a hit.  The idea is simple and can be applied in so many different ways once you learn the technique.

    Burrito braid
    1 Pillsbury refrigerated pizza dough (in the roll)
    1 pound ground turkey/ground beef
    taco seasoning (1t chili powder, 1t cumin, 1 T Southwest seasoning,salt pepper)
    1/2 onion, chopped
    1 can black beans
    4 oz. cream cheese softened
    1/2 cup salsa
    1 cup shredded cheese


    • Place dough on cookie sheet and roll out. I have used foil before under it or my silpat, or nothing the others are just for ease of cleaning.
    • I browned my meat and onion and seasoned like I would do for tacos.  If you use a packet great, I really like Mrs. Dash fiesta lime  or any other southwest season mix.
    •  Spread cream cheese down center third of dough.
    • Pour salsa over cream cheese
    • Spread meat, beans, sprinkle with cheese 


    • On each long side, cut 1-in.-wide strips about 2-1/2 in. into center.


    • Starting at one end, fold alternating strips at an angle across filling. Pinch ends to seal and tuck under. Cover and let rise for 30 minutes.
    • Brush with reserved egg. Bake at 350° for 20-25 minutes or until golden brown
    Slice into sections top with sour cream, olives, avocados what ever suits your fancy.
      You could also make this a peanut butter and jelly braid or a BBQ chicken braid.  Use your imagination it is fun!

    not so green, green smoothie

        Sorry I have been M-I-A for the past couple days between being in California away from my computer I have been sick, so sick laying on my moms couch doing nothing.   But, we are home now, and life must go on.
       I never get sick, yes hardly ever.  I am now, and I think either it is to help me feel compassion on those who are sick more often, like my poor husband,  or because last week my husband, friend and exchange student Rina were all sick and I kept thinking I am so glad this doesn't happen to me I must be healthy or because I was gone all last week with out my BLENDER and I did not drink this smoothie.  It was probably a mix of all three.
      This morning first on my priority list was to make my smoothie.   You can make green smoothies with out a fancy blender but once I went smooth it is hard to go back.  I am really in love with these.  This is what I have every morning for breakfast.
      Many people do not know what a  green smoothie is but it is simple just 40% greens and 60% fruit.  You do not taste the greens at all.   This is the best way to eat greens as well because it breaks down the nutrients much better than us chewing.  I choose not to put in any fruit juice or yogurt or anything like that because of the extra sugar, it may take a little getting used to it you are used to a very sweet fruity smoothie.  My kids both love them.  One morning I forgot to make extra for them and they both cried until I gave them some.  They just think it is a sweet drink not that I am sneaking a few servings of fruits and vegetables.  I also add  ground flax seed, you do not taste it at all but it adds more fiber and omega 3's.  Enough about the smoothie, now lets make it.

    You can really add any type of green you like (mustard greens are way to strong do not even think about it) and any type of fruit.  This is my line up:

     2 huge handfuls of greens I usually use spinach but, I try and mix it up a bit with kale and romaine too about 2-4 cups depending on my choice kale is a little stronger I do not use as much
    1-2 cups liquid, I use filtered water (depending how thick you like it)
    1 large banana. This really mellows the flavor of greens
    3T ground flax seed
    1 1/2 cups frozen berries (  I love this triple berry mix blueberries blackberries and raspberries)
    1 cup other fruit today I used frozen peaches I love a handful of grapes too they make it so sweet
    1 large carrot. This also really sweetens the drink up.
    If it is still to bit try using some apple juice as your liquid or adding a squirt of honey.
     Also for a protein boost add protein powder I should do this more but Parker is allergic to both soy and whey protein so I am two lazy to make separate batches. I have also experienced with silken soft tofu for protein it was good it takes like nothing .

     I forgot to show my banana.  I am sure you have seen one before, imagine it there.

     I didn't have my carrot ready in time, but it is not too late to add it.

    If you do not use frozen berries then you will also want to add ice at the end.  If it is not blending well and getting stuck add more liquid.   I use a Blendtec blender I absolutely adore it. I had a vita-mix before and I used them side by side I chose the blendtec, but both were great.  Now I understand you all might not have this blender, before you add it to your Christmas list try yours out it will probably do a fine job.  The main difference is your blender will not break down all the little seeds from the berries,  not a big deal. A note from my reader was a tip if you are using a  less powerful blender to do the greens and water separate and liquefy that then add other fruits.  Just blend it as good amount it make it smooth as possible.

    Owl Cupcakes

    My best friend was making these for her daughters classroom party today and I thought they were a "hoot"  If you are still looking for a fun Halloween cupcake look no father.  these are darling and easy to make.  I found this recipe and instructions and photo from Ezra pound cake.


    Owl Cupcakes

    Adapted from Karen Tack and Alan Richardson’s “Hello, Cupcake!”
    • 12 chocolate cupcakes
    • 1 can chocolate frosting
    • 24 Oreos
    • Medium bag of M&M’s
    1. Separate the Oreos. You might want to microwave them for a few seconds first. Use a paring knife to remove any crumbs from the cream filling.
    2. Using a serrated knife, make 2 parallel cuts 1/2 inch in from the edge on each plain cookie half. The two outside edges will be used for the ears.
    3. Spoon 1 cup of chocolate frosting into a Ziploc bag, press out any excess air and set aside. Spread the remaining frosting on the cupcakes.
    4. Using a little frosting, attach 2 of the large ear pieces, rounded sides in and about 1 1/2 inches apart, on top of each of the cupcakes. Angle the ears slightly away from each other, and allow them to extend about 3/4 inch beyond the edge of the cupcake.
    5. Place two cream-sided cookie halves, cream side up, on the upper half of each cupcake to make the eyes.
    6. Snip an 1/8-inch corner from the bag with the chocolate frosting. Pipe lines of frosting along the length of the cookie ears to cover. Starting with the edge at the top of the cupcake, pipe the feathers with the frosting using a squeeze-and-pull motion. Work inward from the edge in slightly overlapping rows until the section above the eyes is covered. Pipe a few feathers on the edge just below each eye.
    7. Press a yellow M&M in the middle of each cupcake to make the beak. Use a dot of frosting on the cream of each cookie to attach a brown M&M to the eyes of the cupcakes.
