This is one of those dishes I love to order from Chinese food take out. It is also a winner among kids probably because it is sweet. I was craving it one night and decided I would make it but much healthier than the traditional fried way. I would do it just like a stir fry. It turned out great everyone including my kids went back for seconds.
Try out this easy healthy meal your family will love!
Ingredients:
1 pound skinless, boneless chicken breast meat - cubed
2 tablespoons vegetable oil
1 onion sliced
1 sliced green bell pepper
1 sliced red bell pepper
1 cup carrot strips (julienned)
1 clove garlic, minced
1tablespoon fresh ginger chopped
1 tablespoon cornstarch
1/3 cup low sodium soy sauce
1(15 ounce) can pineapple chunks
1 (15 ounce) can mandarin oranges ( I just added these because I knew my kids would like them, not needed)
1/4 cup ketchup
2 tablespoon vinegar
2 tablespoon brown sugar
Directions:
1. Brown chicken in oil in a large skillet over medium high heat. Add onion, green bell pepper, red bell pepper, carrot and garlic and stir fry for 1 to 2 minutes.
2. In a small bowl, combine cornstarch and soy sauce and mix together; pour mixture into the skillet, along with the pineapple and liquid, ketchup, vinegar, sugar and mandarins. Stir together and bring to a full boil.
Serve over rice or noodles.
Serves 4-6

Pineapple salsa chicken
Around the first of the year I saw this recipe over on Mels Kitchen Cafe. Personally I love Mel. I would totally be her friend and hang out if we lived closer. Everything she cooks looks and tastes delectable and she is a great mom of 4 little boys. How she does it I do not know. She is amazing. If you have not been to her site you have too. Anyways the first thing that caught my eye for this recipe was that it is done in the slow cooker. That was one of my resolutions this year was to use my slow cooker more. I am being serious. It makes my life so much easier. Throw things in in the morning and they are done and ready to serve at dinner time. No fuss, no hassle especially during that busy time of the day. Not sure how it is at your house, but between the hours of 3-6 is mad craziness and I am sure as my kids grow so will the craziness. So right now anything I can do a time or two a week to make it easier I am all for. Most the things I have ever made in my crock pot are so good!! win-win-win!!
The pineapple in this recipe makes it so good. It adds a little bit of sweetness and acidity and balances the flavors very nicely. It is not strong or overpowering but everyone will say.... mmm what is that?... so good!
This recipe is adaptable too you can do more chicken if wanted. All I had on had was four breasts and I felt like it was enough. I also used black beans but I think any bean would be good. Black are just my favorite. I used a medium salsa to give it more flavor. Any salsa will work. This is my absolute favorite salsa. Jacks Garden Fresh Gourmet I buy it at Costco it is fresh and the best salsa I have ever had!! It is all natural so it does not last very long just a few weeks... but that just means I have many excuses to break out the chips and salsa often (my favorite snack).
Ingredients
4 fresh or frozen chicken breasts
1 (20-ounce) can crushed pineapple, drained
2 (15-ounce) cans black beans, rinsed and drained
2 cup salsa
1T Mexican seasoning mix (cumin , chili powder, garlic powder and salt)
Garnishes, like sour cream, cheese, tomatoes, lettuce, avocado, chips, lime wedges, cilantro etc.
Directions
Place the chicken in the crock pot and add the rest of the ingredients. Cook on low for 6 to 8 hours. Remove chicken and shred. Mix the chicken back in with the rest of the ingredients. If mixture is too wet you can drain off liquid. If making burritos this would be wise so it is not soupy.
I made mine into a salad (what I do most of the time), but this would be great made into tacos or burritos or enchilada filling or piled on top of chips and smothered with cheese and eat as nachos. That is how I ate it for lunch with leftovers. It is great and so versatile.

simple roasted asparagus
Sorry I have been MIA for the past few days and basically all of last week too. Things are Crazy town here and I have not been feeling good and honestly the thought of food or looking at food has been making me nauseous. Which is insane for me. Hopefully I am over that and back for good. I have lots of recipes in store to share with you, I just need to edit pictures and write up the recipes... stay tuned
This is one of my favorite side dishes, it is so easy to make, very minimal steps and such a tasty dish. When I married my husband I announced one night I was making asparagus for dinner and he said he was about to throw up on his mouth. I was astonished how could he not like it. Come to find out he had only had canned asparagus... YUCK! Mushy soggy asparagus is not what I am about.
1 pound fresh asparagus (for roasting I like fatter spears)
1 clove garlic minced
Kosher salt
Freshly cracked black pepper
When choosing your asparagus look for firm spears with ends that aren't too dried out and tight, compact heads. As with almost all vegetables, look for asparagus that feels heavy for its size. Start off by washing them up and aligning your asparagus. Take one hold it up then bend it, where it naturally breaks is where it is tender.
Discard the end.. Now you can repeat with each of them or line that now trimmed one up and cut the rest all about the same if they are similar in size. I like the fold and break method it is kinda fun.
Then lay them out on a cookies sheet. Drizzle with olive oil then kosher salt and freshly cracked black pepper. Mix them all together until coated. Roll back out flat. Place in oven for 10 minutes until lightly browned. Once during cooking roll the spears so they cook evenly.
I also love them topped with fresh grated Parmesan cheese.

GIVEAWAY and Split pea soup

My mother has made this soup since I was a little girl and I have always LOVED it. I know I was a strange kid. It is still one of my favorites and fortunately my husband likes it too. I think there are two kids of people: those who like split pea soup and those who don't... or they think they don't. If you have never had it or only had it from a can you are missing out. You have got to try this. This is a very basic recipe. Many people add potatoes too, but I usually opt not to. I am not really a potato girl... I know I know and I live in Idaho....
I love the lemon juice it really brightens it up and lighten the flavor. This is a must on a cold day. It is so healthy and just pennies to make.... It would be great in a bread bowl too or top with croutons....mmmm
Ingredients
1 pound split green peas, picked over and rinsed
3 medium smoked ham hocks or ham shanks (what ever look like they have more meat on them)
1 Tablespoon minced fresh thyme or 1t dried
salt
2 quarts water
2 large carrots, peeled and chopped medium
2 onions, minced
2 ribs celery, chopped medium
2 tablespoons fresh lemon juice
pepper
Directions
1. Bring peas, ham hocks, thyme, 1 teaspoon salt and water to a simmer for an hour in a large dutch oven or heavy pot. Cook for one hour.
2. Stir in carrots, onions and celery. Continue to simmer until peas have soften and are broken down. 25-35 minutes.
3. Remove hocks. When they are cool enough to handle remove any fat skin and bones and separate meat I shred mine and add to soup. (if your hocks or shanks do not have much meat on them add deli ham. You can buy it sliced 1/2 inch thick about 6 ounces then chop up into small chunks.
OR you can put all ingredients at the same time into the crock pot and leave it for 4 hours on High or 6-8 hours on low!! How simple is that!
Note: if you read the label on split peas it always reads sort and wash peas. I would rinse mine, but never would I sort them.. what did they want me to sort. It seemed pointless and and extra step I didn't want to take the time. While I was researching my recipe before I made this soup, I was reading in my America's Test Kitchen Cookbook that often there are small rocks or pebbles in the peas.... yikes....so I sorted, who wants to bite into a pebble?... not me... I have expensive teeth. So guess what I found.... TWO ROCKS!! well pebbles. They were easily recognizable as a rock while sorting through.... Moral of the story if it says sort they is a reason you should sort. Hopefully you will not find anything, but on times you do you will be glad you sorted.
I got this recipe from America's Test Kitchen Cookbook. It happens to be exactly my moms recipe as well that she has been cooking for 30 years. But a side note I LOVE this cookbook, it has so many helpful hints and tells you why you should do something what the technique is behind it. You learn so much while reading it. I often find myself curled up on the couch reading this book. They also have gadget reviews and recommendations. I think this is a must have cookbook. I think you all should have one too!!! Balsamic roasted pork Lion
I feel like so many of us my self included when we think of healthy meats we think only fish or poultry... but there are so many lean cuts of pork. This pork tenderloin in one 4 oz serving has only 154 calories, 6 grams of fa,t and 23 grams of protein. Sounds good to me!! It was so tender and juicy as well! I served this pork lion along side raviolis at my Christmas dinner it was so effortless, but everyone really enjoyed it.
Ingredients
Ingredients
- 2 tablespoons steak seasoning rub
- 1/2 cup balsamic vinegar
- 1/2 cup olive oil
- 2 pounds boneless pork loin roast
Directions
- Dissolve steak seasoning in balsamic vinegar, then stir in olive oil. Place pork into a resealable plastic bag and pour marinade overtop. Squeeze out air and seal bag; marinate 2 hours to overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Place pork into a glass baking dish along with marinade. Bake in preheated oven, basting occasionally until the pork reaches an internal temperature of 145 degrees F (65 degrees C), about 1 hour. Let the roast rest for 10 minutes before slicing and serving. One the package of the roast it said 22-25 minutes per pound so figure your time accordingly.

cream of potato and broccoli soup
This is one of my favorite comfort foods, especially when it is FREEZING outside like it is here, like a high of 8 degrees YIKES! This soup will warm you up and it is a little healthier and lighter version of this classic for this new year. This creamy, low-fat soup is a delicious way to serve broccoli, a nutritional powerhouse, and the addition of beans makes it a one-dish meal.
This is a cream soup with no cream, cheese or butter.... unbelievable! It tastes great too!
this makes a ton, feel free to half it. I love to make extras and freeze it for later. cook once eat twice....
Ingredients
8 cups of water or broth
2 large potatoes, scrubbed, skin ON and cubed
2 large carrots chopped
2 stalks of celery and leaves chopped
1 large or 2 small onions chopped
6 cloves of garlic whole and peeled
stir together and serve. With how light this is you can even afford to top with cheese.

8 cups broccoli florets
1 1/2 tsp salt, as needed
Directions
Directions
bring liquid and veggies and seasoning to boil and let simmer for 20 minutes or until vegetables are tender. Add beans.
Laddle into blender and puree until smooth. Return to pot .
Add broccoli into soup simmer for 5 minutes until tender. I like my soup smoother so then I pull out florets and pulse in blender to chop up a bit, but I could have chopped more before I cooked them, but I am lazy.

New Years Resolutions......
What is the top term googled for past few days? How to loose weight or eating healthy..... everyone has one thing on their mind these days after the Holidays, shedding the weight they put on and turning new leafs and eating healthier. (disclaimer I really have no idea what the top google term searched for is. That is my husbands department, I would ask him how to look it up but I would probably be laughed at because that is common knowledge... But I bet it is up there... :)
Here are some of my healthy tips. This is not some scientific research, but it is what has worked for me and what I have learned through reading.
The biggest thing was cutting out sweets. As much as I hate to say it sugar is one of the things that really needs to be consumed less of.
The first thing to do today throw away the rest of the Christmas candy and goodies. Just open the trash throw them in and never look back... you will be okay...
Every time you feel the hankering for sweets take a drink of water. It is amazing it really works. After I drink the water the craving is gone and the extra water is good for you too. Or have a piece of fruit.
Cut out all drinks besides water. Especially fruit juice and soda. There is so much extra sugar and calories. In the case of fruit juice you get the fruit, but minus the fiber from the fruit. That is one of the best parts for you. If you drink juice it can be a whole juice that you make yourself.
I make a salad at every meal and have it as my main course everything else is a side item.
Cut out white flour. I use 100% whole wheat pasta and bread. Also always brown rice.
I do make dessert once a week and indulge if not life just isn't as fun.... moderation in all things.
Plan my menu every week. It is is planned and prepped and in the fridge that means on Tuesday after scouts and piano at 6pm I am not running through a drive thru or pick up take out. So many less calories if we cook ourselves.
Those are my main secrets and I think they really work. Give it a try you will have so much more nutrition in your diet and feel better too.
This year I do want to eat even healthier and share those recipes with you too, we will still have our share of butter and chocolate involved, but learn to make tasty dishes that are good for us too. Happy New year Everyone!!!

good luck soup
Every year since I can remember on new years day my family and I would go to my grandma Adele's house on New years day for "Good Luck Soup" ( folklore has it that eating black-eyed peas on New Year’s Day brings good luck and money) so that is what we always had for dinner of course we would also have a roast, pasta, salad, veggies, bread and dessert... who just east soup for dinner at her house??? I have always loved it. Last year while I was away from my family on new years I thought I would get the recipe from my grandma and try it myself. So many memories flooded in with my first spoonful. I love the soup, I love the tradition and I am not above just having a nice big bowl or two of soup for dinner! Enjoy and HAPPY NEW YEARS!!!!

INGREDIENTS
2 cans black-eyed peas rinsed
2 to 3 pounds of ham hocks, cut in 2-inch pieces (I like to use ham shanks they have more meat on them)
Chicken stock, as needed
3 celery stalks, chopped
3 carrots, chopped
1 large onion, chopped
2 to 3 garlic cloves, minced
1 bunch of kale
1/2 teaspoon each of oregano, thyme and basil
2 bay leaves
Cayenne pepper, to taste
Salt and pepper, to taste
INSTRUCTIONS
Place ham hocks in a large pot. Add enough water to cover. Simmer for 2 hours or until tender. Remove meat from bones. Reserve meat, discard bones. Pour liquid (ham stock) from the pot into a large measuring container. Add enough chicken stock to make at least 6 to 8 cups of liquid. Return liquid to pot and add peas.
Add vegetables and spices to pot and bring to a boil. Remove center stems from kale and chop coarsely. Add kale and ham to pot, cover and continue cooking until kale is tender. Season with salt and Tabasco to taste and serve with Simmer for about an hour. Peas should be tender but not mushy. Remove bay leaves and serve.
This dish can be reheated for later serving, but don't cook too long, or the peas will break up.

Pour liquid (ham stock) from the pot into a large measuring container. Add enough chicken stock to make at least 6 to 8 cups of liquid. Return liquid to pot and add peas.
Add vegetables and spices to pot and bring to a boil. Remove center stems from kale and chop coarsely. Add kale and ham to pot, cover and continue cooking until kale is tender. Season with salt and Tabasco to taste and serve with Simmer for about an hour. Peas should be tender but not mushy. Remove bay leaves and serve.
This dish can be reheated for later serving, but don't cook too long, or the peas will break up.

easy shrimp cocktail
Like I said before I took a little help from costco this christmas. I was semi homemade this season, I had been not feeling too hot latley and unexpected company came. I was looking for quick and easy things to have on hand for snacking. I bought a bag of cooked peeled devined shrimp. whipped up a cocktail sauce and a healthy yummy appetizer.
2 pounds shrimp
Cocktail sauce
2 pounds shrimp
Cocktail sauce
- 1/2 cup chili sauce (recommended: Heinz)
- 1/2 cup ketchup (recommended: Heinz)
- 3 tablespoons prepared horseradish
- 2 teaspoons fresh lemon juice
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon hot sauce (recommended: Tabasco)

Green beans with Portobello saute
This is honestly my favorite way to eat green beans. This how I am making my green beans for Thanksgiving. It is a little lighter than a traditional green bean casserole and I think so flavorful. The key is caramelizing. I love my onions, garlic and mushrooms really caramelized and sweet with very tender green beans
You can use fresh green beans or pre trimmed frozen whole green beans, both ways work great! Just promise me nothing out of a can!!! They should not even be considered green beans. If that is the only way you have ever had them, please try this you might actually like green beans!

Ingredients serves 8 printer friendly recipe
- 3 pounds green beans, if fresh make sure you trim them
- Coarse salt
- 2 tablespoons extra-virgin olive oil, 2 turns of the pan
- 1 tablespoon butter
- 2 red onions, sliced
- 4 cloves garlic, crushed
- 4 portobello mushroom caps, or 2 pounds baby portobello mushrooms thinly sliced
- salt, pepper to taste
Directions
Simmer green beans in salted boiling water 5 minutes. Drain green beans and return skillet to medium heat. Add oil and butter to the pan. Add onions and garlic and saute 2 to 3 minutes. Add mushrooms and season with salt and pepper. Saute mushrooms 5 minutes with onions and garlic until browned nicely, add green beans back to the pan. Heat green beans through. Cook for 5 - 10 more minutes until green beans are desired softness. Transfer green beans and mushrooms to a serving plate.

Roasted brussel sprouts
I might risk sounding extremely dumb but here I go. Until yesterday I was convinced it was two weeks til Thanksgiving not one. So many things kept coming up alluding to it being closer, but I pushed them all aside thinking they must be wrong it is not next week. Finally, I glanced at the calendar to see how wrong I was. I guess this is what happens when I go on vacation the first week of November, I am way off. Crap I need to get moving, I hate shopping for food a few days before Thanksgiving I need to make my list and go today. So when my kiddos wake up from naps we are off.
I have had many people say to me they need more side recipes they are tired of green bean casserole. True all canned ingredients making a green bean casserole is not my idea of a thanksgiving feast either, when homemade and fresh green beans it can be heaven. But today I will give you few other ideas.
The first one is brussel sprouts... bad wrap huh. I personally enjoy them when they are roasted and I was reminded of that last night while watching Throwdown with Bobby Flay. I hope you did not miss it, It was great Ree Drummond from Pioneer Woman challenged HIM to a Thanksgiving throw down it was at her ranch and I will not tell you what happened maybe you recorded it or you can find it online somewhere. It was great. I was routing for Ree the whole way. I have been reading her blog for years now and I feel like she is my friend. At least I like to think so. It was so fun to see her in her Lodge and with her family and friends. Anyways sorry for the tangent but Bobby Flay made these amazing looking brussel sprouts. I have not tried these yet, but I will. But I have made these before and I love them and so will you! They are simple, quick and tasty!
Simple roasted Brussel Sprouts
Ingredients serves 4
- 1 1/2 pounds Brussels sprouts, ends trimmed and yellow leaves removed.
- 3 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Directions
- Preheat oven to 400 degrees F (205 degrees C).
- Place trimmed Brussels sprouts, olive oil, kosher salt, and pepper in a large resealable plastic bag. Seal tightly, and shake to coat. Pour onto a baking sheet, and place on center oven rack.
- Roast in the preheated oven for 30 to 45 minutes, shaking pan every 5-10 minutes for even browning. Reduce heat when necessary to prevent burning. Brussels sprouts should be brown and caramelized when done. Adjust seasoning with kosher salt, if necessary. Serve immediately.

not so green, green smoothie
Sorry I have been M-I-A for the past couple days between being in California away from my computer I have been sick, so sick laying on my moms couch doing nothing. But, we are home now, and life must go on.
I never get sick, yes hardly ever. I am now, and I think either it is to help me feel compassion on those who are sick more often, like my poor husband, or because last week my husband, friend and exchange student Rina were all sick and I kept thinking I am so glad this doesn't happen to me I must be healthy or because I was gone all last week with out my BLENDER and I did not drink this smoothie. It was probably a mix of all three.
This morning first on my priority list was to make my smoothie. You can make green smoothies with out a fancy blender but once I went smooth it is hard to go back. I am really in love with these. This is what I have every morning for breakfast.
Many people do not know what a green smoothie is but it is simple just 40% greens and 60% fruit. You do not taste the greens at all. This is the best way to eat greens as well because it breaks down the nutrients much better than us chewing. I choose not to put in any fruit juice or yogurt or anything like that because of the extra sugar, it may take a little getting used to it you are used to a very sweet fruity smoothie. My kids both love them. One morning I forgot to make extra for them and they both cried until I gave them some. They just think it is a sweet drink not that I am sneaking a few servings of fruits and vegetables. I also add ground flax seed, you do not taste it at all but it adds more fiber and omega 3's. Enough about the smoothie, now lets make it.
You can really add any type of green you like (mustard greens are way to strong do not even think about it) and any type of fruit. This is my line up:

2 huge handfuls of greens I usually use spinach but, I try and mix it up a bit with kale and romaine too about 2-4 cups depending on my choice kale is a little stronger I do not use as much
1-2 cups liquid, I use filtered water (depending how thick you like it)
1 large banana. This really mellows the flavor of greens
3T ground flax seed
1 1/2 cups frozen berries ( I love this triple berry mix blueberries blackberries and raspberries)
1 cup other fruit today I used frozen peaches I love a handful of grapes too they make it so sweet
1 large carrot. This also really sweetens the drink up.
If it is still to bit try using some apple juice as your liquid or adding a squirt of honey.
Also for a protein boost add protein powder I should do this more but Parker is allergic to both soy and whey protein so I am two lazy to make separate batches. I have also experienced with silken soft tofu for protein it was good it takes like nothing .
If you do not use frozen berries then you will also want to add ice at the end. If it is not blending well and getting stuck add more liquid. I use a Blendtec blender I absolutely adore it. I had a vita-mix before and I used them side by side I chose the blendtec, but both were great. Now I understand you all might not have this blender, before you add it to your Christmas list try yours out it will probably do a fine job. The main difference is your blender will not break down all the little seeds from the berries, not a big deal. A note from my reader was a tip if you are using a less powerful blender to do the greens and water separate and liquefy that then add other fruits. Just blend it as good amount it make it smooth as possible.

spaghetti squash "spaghetti"
I have talked about lots of sweets that are fall related, with the pumpkin cookies, caramel apples, apple cider etc... but how about the other crops that are amazing in the fall ....Squash.
A squash that I never had until about a year ago was spaghetti squash. I think the easiest way to cook it is whole and on a baking sheet at 375 for about an hour depending on the size of your squash. Once I tried to cut it raw and cook it cut in two, but it was so hard to cut. Cooking it first and it is like cutting butter when it has baked for an hour. Then scrap out seeds and test squash if it is still hard then put it back in over and continue cooking for about 20 minutes or so until soft and tender.
I have to tell you then night before I tried this the first time I honestly laid in bed trying to imagine how this squash would turn into noodles it literally boggled my mind. Then once I ran my fork through it , it was completely different than how I had imagined, but so cool. Really it is like magic.
I like to top mine with spaghetti sauce just like I would noodles.You can do with meat or without. It is delicious and a great way to save the pasta and go lighter and more nutritious. It is a really nice alternative to pasta, and when you eat your spaghetti this way you don't have to feel bad about that nice slice of bread you are having on the side, because you aren't doubling up on your carbs.
My kids ate this so fast they both had two bowls... Also for anyone with gluten allergies this is a great substitution for wheat products. My little boy is allergic to almost everything under the sun, it was nice not to have to cook him his own type of noodle.
Next time you are in the store pick up a spaghetti squash and try it for yourself!

Preheat oven to 375.
Bake squash for one hour or until tender
scrap insides with fork after removing seeds. season squash.

Baked mexican fish
Thanks everyone for all your support and nice comments yesterday for our featured apples over at HowDoesSHe.com. It was fun.
Years ago when we were first married I was looking for recipes anywhere I could find them at. One day I bough pre-wrapped fresh salmon from the deli at the store. Under the wrapper it had this recipe. I gave it a try. We loved it and my not fish loving husband said you can not even tell there is fish under there. I have made some modifications over the years but it is still one of our favorite ways to eat fish and most importantly a way to feed it to non fish lovers. It couldn't be easier too. You take your favorite fish I used it on cod, talapia, but our favorite is salmon, cover it with salsa (you choose the heat, if for a family with little ones choose a milder one or one with fruit in it I love the mango salsa from Costco) then cheese, then crushed tortilla chips....bake =delicious. It keeps the fish moist and flavorful. You have to try this. I love to serve it with sliced avocados or a lime cilantro mayo sauce. and brown rice and black beans.

- Rinse fish fillets under cold water, and pat dry with paper towels. Lay fillets side by side in the prepared baking dish. Pour the salsa over the top, and sprinkle evenly with the shredded cheese. Top with the crushed corn chips.
- Bake, uncovered, in the preheated oven for 15 minutes, or until fish is opaque and flakes with a fork. Serve topped with sliced avocado and cilantro lime mayo.

3 tablespoons fresh lime juice
1 garlic clove, peeled
1/4 teaspoon hot pepper sauce
3/4 cup mayonnaise

turkey chili
It is officially fall around here beautiful changing leaves, crisp mornings and chili season!! I love soups and chili's I love when I can get away with cooking them a few times a week for dinner.
This weekend we had a fall social with the adults of our church and we all brought chili. There are so many different variations of chili, to very meaty, no bean, vegetarian, no tomatoes white, chicken.....
When I make things like this and soups I clean out my fridge and throw lots of stuff I think would work well together. It might seem like a lot of ingredients but customize it to fit you and what you like. Today I will show you one that is our staple chili. It is not the most ordinary, but neither and I. Mine is secretly full of veggies, that taste great give good texture and of course nutrition.
I opted for ground turkey because it is lighter than beef and I only did one pound with lots of beans (so good for you) and a few veggies. ( most people may not do mushrooms in their chili, that is how we made it growing up, I like them, I do less meat so this gives it more of a meaty feeling and great flavor, and my kids love them, even fight over them) Even picky eaters with not find them in all the goodness. Especially if they get to eat it with chips. In my house chips with big scoops on top are like the magic utensil for eating things they would not normally want to.

Ingredients
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 bell peppers, diced ( I used red but you can use whatever color you have on hand)
- 1 pound mushrooms ( I used baby bellas) chopped
- 2 stalks celery finely diced
- 1 pound ground turkey (trying to keep it healthier)
- 1Tb mexican reasoning
- 1T chili powder
- 1T ground cumin
- 2 tablespoons tomato paste
- salt and pepper to taste.
- 1 (14.5 ounce) can beef broth or water
- 1/2 cup favorite salsa
- 2 (14.5 ounce) can crushed tomatoes, or coarsely chopped tomatoes packed in puree
- Juice of one lime
- 2 T brown sugar.
- 1 can kidney beans, rinsed
- 1 can pinto, rinsed
- 1 can northern beans, rinsed (use any variety of beans you like) Tip: check consistency and add water if needed and put on lid or if too liquidy keep your lid off and the chili will cook down.
Directions: Saute onion, bell peppers, celery, mushrooms in oil, until tender then move to side brown turkey, add seasonings, tomatoes and beans etc... simmer on low for 30 minutes to an hour or put in the crock pot and let it go all day.
Then for the fun part, garnishes we love cut up avocados. sour cream, cilantro, green onions, and chips and of course cheese. Go ahead be as naughty or as nice as you like and of course enjoy!!!

Lentil Quinoa Salad

I am always on the search for another good quinoa recipe. The other day while watching the foodnetwork I saw Melissa D' Arabian (last years winner of The Next Food Network Star) use it in a recipe I was anxious to try it and I am happy I did it is totally different than how I had been using it. If you have not watched her show $10 dinners you should it is good and she gives great budget conscious tips.
Ingredients
1/2 cup quinoa1 1/4 cups water, plus 2 cups
1/2 cup lentils
1 teaspoon Dijon mustard
2 tablespoons red wine vinegar
1/4 cup vegetable oil
1/4 teaspoon garlic powder
1 lime, zested
Kosher salt and freshly ground black pepper
2 green onions, chopped
1 tablespoon chopped fresh cilantro leaves
Directions
Put the quinoa in a sieve and rinse incold water. In a large microwave-proof bowl with a cover, add the rinsed quinoa and 1 1/4 cups water. Cover
and microwave on high for 9 minutes. Let it sit for 2 minutes then stir. Quinoa should be tender enough to
eat, but with a little "pop" upon biting.
Put the lentils in a sieve and rinse in cold water. In a saucepan, simmer the lentils in 2 cups water until
the lentils are tender, but not mushy, about 30 minutes. Drain and cool.
In a small bowl, whisk the mustard and vinegar together, and drizzle in the oil to make an emulsion. Add the
garlic powder, lime zest, and salt, and pepper, to taste.
To assemble the salad: In a medium salad bowl, mix the quinoa, lentils, green onions, and chopped cilantro.
Top the salad with the dressing, toss to coat and serve.
I loved it the next day.

Quinoa with black beans

Quinoa (pronounced Keen – wah)
I made this for dinner tonight and it was scarfed down by everyone!!! so tasty and it made it even better to know how good it was for us.
Ingredients:
1 teaspoon vegetable oil
1 onion, chopped
3 cloves garlic, peeled and chopped
1 cup uncooked quinoa
1 1/2 cups broth
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
salt and pepper to taste
1 cup frozen corn kernels (or one can corn)
2 (15 ounce) cans black beans, rinsed and drained
1 can diced tomatoes
Juice of one lime
1/2 cup chopped fresh cilantro
garnish with avocado or FF sour cream

Directions:
first start by soaking Quinoa in water. before you add it to your sauce pan rinse very well and drain.

For most, quinoa is known as a type of grain, not entirely true though. If you want to get technical, Quinoa is actually a seed; it is referred to as a grain because of its cooking characteristics.
Quinoa has a very delicate flavor and a lovely texture. People have said it is similar to couscous – I disagree. The texture is soft, yet there is slight bite from the spiral tail of the quinoa. Spiral tail? Yes, as quinoa cooks the outer germ around each grain twists to form a white spiral tail. This tail is what gives it a pleasant bite or crunch. The texture combination is why I love quinoa – it is heartier, more nourishing than other grains. And thanks to its recent exposure in cooking magazines and shows, you can easily find quinoa at most supermarkets and at natural foods stores.
Quinoa is high in fiber, calcium and iron, low in fat and is very easy to digest. Compared to other grains, quinoa is the highest in complete protein which makes it an ideal ingredient for vegetarians. Quinoa is so nutritious in fact, that it was used to sustain Incan armies who would march for several days on a simple mixture of quinoa and fat, or “war balls” as they called them. As I stated previously, quinoa is an ancient grain; records show that quinoa has been cultivated in the South American Andes since around 3000 BC. Quinoa has only been grown outside of South America for a relatively short period of time. In the US, most quinoa comes out of Colorado.
So, how do you cook this stuff? I cook my quinoa in a saucepan, a 2:1 ratio of liquid to quinoa. For the liquid, I usually substitute stock for water as the grains absorb so much of the flavor. Rinse your quinoa before cooking to remove any leftover residue. I bring my stock up to a boil, add the quinoa and reduce the heat to the lowest setting and cover. I usually let it sit for about 10-15 minutes until the liquid is absorbed. Then I fluff with a fork and set aside. Don’t worry too much if there is a bit of excess water on the grains – it tends to evaporate as it sits. If you feel compelled, you can always drain in a wire strainer. I suggest reading the instructions on your box as each variety of quinoa cooks differently. Trial and error works best when cooking quinoa.

garlic lime chipotle pork chops.

The other night I was making dinner for a dear friend of mine who had surgery. She and her husband eat low calorie low fat foods. I knew it was very similar to Weight watchers diet. So I began searching for recipes and I cam across this one from Ginas weight wathcers recipes.
I mainly stuck to the recipe but I wanted a bit more spice so I added one chipotle pepper in adobo sauce chopped up finely and mash it with my knife until it creates a paste. They are really hot but if you create a paste of it it adds a nice heat and smokey flavor. Also I had some orange pineapple juice in my fridge so while I let it marinate I decided to add that to give some more liquid so it would cover the surface more evenly.
Garlic Lime Chipotle Pork Chops
The lime zest gives these chops an extra zing. Adjust the seasoning to your liking. Make these in the broiler or on the grill. Serve this with cilantro lime rice on the side.
Servings: 4 • Cook Time: 8-10 minutes • Points: 6 ww points
- 4 (6 oz) lean boneless pork chops
- 4 cloves garlic, crushed
- 1 tsp cumin
- 1 tsp paprika
- 1 lime, juiced
- chipotle pepper in adobo sauce, mashed into a paste
- lime zest
- 1/3 cup citrus juice ( I used orange pineapple juice)
- salt and fresh pepper
Line broiler pan with foil for easy clean up. Place pork chops on the broiler pan and broil about 4-5 minutes on each side or until nicely browned.
my pork chops had bones in them and took a bit longer to cook, but I kept waiting for it to really brown and that did not happen for me, do not wait for them to look like a steak.. it will not happen and if it does you sure will be sorry and so will your jaw.
