Italian Dip

So I wrote this this post up a few weeks ago but I had not made the dish recently and I was waiting on my picture. While I was publishing another post I accidentally pushed publish on this one with out realizing it til someone left me a comment on it. Oops. It was not edited and no picture. So here it is again making its second debut.

 These french dip  I mean Italian dip sandwiches are wonderful.  I saw them on pioneer woman last winter and I made them for a super bowl party I had here at the house.  They were devoured.   So much more flavor than a traditional dip sandwich.  A little spicy and so wonderful.  You can leave plan or top with provolone or pepper jack cheese.  You can use any kid of bread here.  I opted for ciabatta bread.  It is my favorite lots of flavor, chewy texture and so good.  I often do not eat white bread if I do I want to make it good. Good for me is Ciabatta...mmm   Enjoy!!!

 Ingredients

  • 1 whole Beef Chuck Roast, 2.5 To 4 Pounds
  • 1 can Beef Consomme Or Beef Broth
  • 1 pack good seasons Italian Seasoning packet
  • ¼ cups Water
  • ½ jars (16 Oz) Pepperoncini Peppers, With Juice
  • Buttered, Toasted Deli Rolls

Preparation Instructions

Combine all ingredients in a slow cooker crock pot. Stir lightly to combine seasoning with the liquid.
Cover and cook on low for 8-10 hours, or until meat is fork-tender and falling apart. With two forks, completely shred all meat, leaving no large chunks behind. Serve immediately, or keep warm  OR
May make the day before, then store in the refrigerator. Remove the hardened fat from the top before reheating.
Serve on buttered, toasted rolls. Top with cheese and melt under the broiler if desired. Serve with juices from the pot.

Sonoma Chicken Salad

 A while back I tasted the sample  at Costco of their Somoma chicken salad it was so good. I immediately bought the large package and went on my way home.  While it was at my house I looked at the ingredients and realized this would be easy enough to make myself.   I found a few  other variations online of others trying to replicate this great chicken salad.  It was a simple fast dinner.  It would be great though for a lunch or a baby shower or something like that.
  Traditionally I love chicken salad on croissants  I was trying to be healthier and I ate mine on a bed of spinach and served my husbands on Dave killer bread (my favorite bread, it is so nutritious and hearty)
  • 100% Whole Grain
  • 5g Fiber
  • 6g Protein
  • Certified organic
  • 27oz loaf size
  • Certified Kosher by Oregon Kosher
 Note I am not paid to say this (I wish), just my opinion these people have no idea who I am...

Ingredients

    • 1 cup mayonnaise( I used light)
    • 4 teaspoons apple cider vinegar
    • 5 teaspoons honey
    • 2 teaspoons poppy seeds
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • salt & freshly ground black pepper
    • 3 large boneless skinless chicken breasts
    • 3/4 cup pecan pieces, toasted
    • 1 1/4 cups dried cranberries ( craisins)
    • 3 stalks celery, chopped

Directions

  1. In a bowl, combine mayonnaise, vinegar, honey, poppy seeds,garlic powder,onion powder, salt and pepper. Refrigerate until ready to dress the salad. This can be prepared up to 2 days ahead.
  2. Preheat oven to 375°F Place the chicken breasts in one layer in a baking dish with 1/2 cup water. Cover with foil and bake 25 minutes until completely cooked through. Remove cooked chicken breasts from pan, cool at room temperature for 10 minutes, then cover and refrigerate.
  3. When the chicken is cold, dice into bite-size pieces or shred and transfer to a large bowl. Stir in pecans, Craisins, celery and dressing.

Sweet and sour chicken

  This is one of those dishes I love to order from Chinese food take out. It is also a winner among kids probably because it is sweet.  I was craving it one night and decided I would make it but much healthier than the traditional fried way.  I would do it just like a stir fry.  It turned out great everyone including my kids went back for seconds.
  Try out this easy healthy meal your family will love!
 
Ingredients:
1 pound skinless, boneless chicken breast meat - cubed
2 tablespoons vegetable oil
1 onion sliced
1 sliced green bell pepper
1 sliced red bell pepper
1 cup carrot strips (julienned)
1 clove garlic, minced
1tablespoon fresh ginger chopped
 1 tablespoon cornstarch
1/3 cup low sodium soy sauce
1(15 ounce) can pineapple chunks
1 (15 ounce) can mandarin oranges ( I just added these because I knew my kids would like them,  not needed)
1/4 cup ketchup
2 tablespoon vinegar
2 tablespoon brown sugar

Directions:
1.     Brown chicken in oil in a large skillet over medium high heat. Add onion, green bell pepper, red bell pepper, carrot and garlic and stir fry for 1 to 2 minutes.
2.     In a small bowl, combine cornstarch and soy sauce and mix together; pour mixture into the skillet, along with the pineapple and liquid, ketchup, vinegar, sugar and mandarins. Stir together and bring to a full boil.

Serve over rice or noodles.
 Serves 4-6

Sticky fingers chicken salad

  This is a quick weeknight meal that came together in no time.   I was craving Wingers the other night I wanted a sticky finger salad...mmmm... my favorite.  Instead of loading everyone in the car and heading there I whipped this up.  Because it is what I had on hand and it was easier for me that night I use already breaded frozen chicken bites (Not chicken nugget... I repeat not chicken nuggets)  I made the sauce soaked my chicken in that after baking and then threw it on a salad.  You can put whatever on your salad.  This was the end of my week a few days since I had been shopping so this was just what I had on hand.

For the sauce:
**Covers about 8 sticky fingers
3 Tbsp. Franks Hot Sauce (It has to be Franks Hot Sauce... no other sauce will taste as good)
3/4 c. brown sugar
2 Tbsp. water

Heat up hot sauce, brown sugar and water in a sauce-pot until all the sugar dissolves Family Favorite Recipes

Salad 
1 large head of Romaine
1 seedless cucumber, sliced
1 bunch green onions, chopped
1/2 cup cheese, diced
1 large avocado, diced
1 cup of chopped tomatoes

 dressing use your favorite ranch or blue cheese.
  I have to admit it was  bit spicy for my kids but they liked that we were having "chicken nuggets" for dinner.  All the flavors melded really nice together and it was so filling.

Pineapple salsa chicken

     Around the first of the year I saw this recipe over on Mels Kitchen Cafe.  Personally I love Mel. I would totally be her friend and hang out if we lived closer. Everything she cooks looks and tastes delectable and she is a great mom of 4 little boys. How she does it I do not know.  She is amazing.  If you have not been to her site you have too.  Anyways the first thing that caught my eye for this recipe was that it is done in the slow cooker.  That was one of my resolutions this year was to use my slow cooker more.  I am being serious.  It makes  my life so much easier. Throw things in in the morning and they are done and ready to serve at dinner time.  No fuss, no hassle especially during that busy time of the day.  Not sure how it is at your house, but between the hours of 3-6 is mad craziness and I am sure as my kids grow so will the craziness.   So right now anything I can do a time or two a week to make it easier I am all for.  Most the things I have ever made in my crock pot are so good!! win-win-win!!
   The pineapple in this recipe makes it so good. It adds a little bit of sweetness and acidity and balances the flavors very nicely.  It is not strong or overpowering but everyone will say.... mmm what is that?... so good!


  This recipe is adaptable too you can do more chicken if wanted.  All I had on had was four breasts and I felt like it was enough.  I  also used black beans but I think any bean would be good.  Black are just my favorite.    I used a medium salsa to give it more flavor. Any salsa will work. This is my absolute favorite salsa.  Jacks Garden Fresh Gourmet I buy it  at Costco it is fresh and the best salsa I have ever had!!  It is all natural so it does not last very long just a few weeks...  but that just means I  have many excuses to break out the chips and salsa often (my favorite snack).

 Ingredients
4 fresh or frozen chicken breasts
 1 (20-ounce) can crushed pineapple, drained
2 (15-ounce) cans black beans, rinsed and drained
2 cup salsa
1T Mexican seasoning mix (cumin , chili powder, garlic powder and salt)
 Garnishes, like sour cream, cheese, tomatoes, lettuce, avocado, chips, lime wedges, cilantro etc.

Directions
 Place the chicken in the crock pot and add the rest of the ingredients. Cook on low for 6 to 8 hours.  Remove chicken and shred. Mix the chicken back in with the rest of the ingredients. If mixture is too wet you can drain off liquid.  If making burritos this would be wise so it is not soupy.
  I made mine into a  salad (what I do most of the time),  but this would be great made into tacos or burritos or enchilada filling or piled on top of chips and smothered with cheese and eat as nachos. That is how I ate it for lunch with leftovers.  It is great and so versatile.

Balsamic roasted pork Lion

 I feel like so many of us my self included when we think of healthy meats we think only fish or poultry... but there are so many lean cuts of pork.  This pork tenderloin in one 4 oz serving has only 154 calories, 6 grams of fa,t and 23 grams of protein.   Sounds good to me!!  It was so tender and juicy as well!   I served this pork lion along side raviolis at my Christmas dinner it was so effortless, but everyone really enjoyed it.
  Ingredients

  • 2 tablespoons steak seasoning rub
  • 1/2 cup balsamic vinegar
  • 1/2 cup olive oil
  • 2 pounds boneless pork loin roast

Directions

  1. Dissolve steak seasoning in balsamic vinegar, then stir in olive oil. Place pork into a resealable plastic bag and pour marinade overtop. Squeeze out air and seal bag; marinate 2 hours to overnight.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. Place pork into a glass baking dish along with marinade. Bake in preheated oven, basting occasionally until the pork reaches an internal temperature of 145 degrees F (65 degrees C), about 1 hour. Let the roast rest for 10 minutes before slicing and serving.   One the package of the roast it said 22-25 minutes per pound so figure your time accordingly.
  I like to slice mine thin and on a bias it help with the grain of the meat and having the most tender slice.

burrito braid

hows your week??  A little busy...?  mine too.  If you are like me you are either preparing for company, getting last minute gifts, entertaining kids out of school. You may need ideas that are fast for dinner and kid friendly too,  you have heard enough whining all day already.   This is what we did a few days ago.  It was a hit.  The idea is simple and can be applied in so many different ways once you learn the technique.

Burrito braid
1 Pillsbury refrigerated pizza dough (in the roll)
1 pound ground turkey/ground beef
taco seasoning (1t chili powder, 1t cumin, 1 T Southwest seasoning,salt pepper)
1/2 onion, chopped
1 can black beans
4 oz. cream cheese softened
1/2 cup salsa
1 cup shredded cheese


  • Place dough on cookie sheet and roll out. I have used foil before under it or my silpat, or nothing the others are just for ease of cleaning.
  • I browned my meat and onion and seasoned like I would do for tacos.  If you use a packet great, I really like Mrs. Dash fiesta lime  or any other southwest season mix.
  •  Spread cream cheese down center third of dough.
  • Pour salsa over cream cheese
  • Spread meat, beans, sprinkle with cheese 


  • On each long side, cut 1-in.-wide strips about 2-1/2 in. into center.


  • Starting at one end, fold alternating strips at an angle across filling. Pinch ends to seal and tuck under. Cover and let rise for 30 minutes.
  • Brush with reserved egg. Bake at 350° for 20-25 minutes or until golden brown
Slice into sections top with sour cream, olives, avocados what ever suits your fancy.
  You could also make this a peanut butter and jelly braid or a BBQ chicken braid.  Use your imagination it is fun!

BBQ Chicken pizza

 Some days I have a wild side and I want something ridiculous like pizza for dinner.  I usually do not eat things slathered in cheese (although I would like to)  I tried to make it a little healthier with a whole wheat crust and maybe not completely slathered in cheese.   This is my  knock of California Pizza Kitchen bbq chicken pizza.  I love the cilantro on it, it makes the dish for me. hope you enjoy.  it is something feast and easy for busy holiday schedules.  enjoy!
BBQ Chicken Pizza

  • Whole wheat pizza dough,  I usually go to my favorite pizza shop in town and for under two bucks I can buy dough from them.  call me lazy, I deserve it, but it is easy and  still healthy so some days I am all for it..  You can make your own or even use store bought, whatever suits your fancy.
  • 3 Tbsp. BBQ sauce (I like Sweet Baby Ray's)
  • 3 Tbsp. ranch dressing

Roll out dough into a 12 inch circle and transfer onto a greased pizza stone or pan. Mix BBQ sauce and ranch together and spread on to unbaked crust.

  • 1 cooked and shredded chicken breast (I season with garlic salt pepper, etc whatever is in the cupboard!)
  • 1 c. fresh spinach chopped
  • 1/2 c. sweet onion (I used red onion)
  • 2 Tbsp. fresh chopped cilantro
  • 2 slices bacon, chopped
  • A few squirts of BBQ sauce, eyeball it.

fresh Mozzarella or a smoked Gouda is divine

Combine these ingredients, except for the cheese, in a bowl and mix until blended. Pour on top of crust. place slices of  cheese on top of toppings and place in a preheated oven. (425 for 15 minutes) or until crust is golden

You can sprinkle some more fresh cilantro on top before serving ( I would recommend it)  serve with a green salad and maybe a fruit salad too and feel great about your dinner!

Turkey Enchiladas

Thanksgiving is over.  We survived!  I hope it was a success and you had a wonderful time.  I know I said I would not see you til Monday but I just couldn't resist sharing this recipe before your leftover turkey is all eaten up.  

So now you have lots of turkey... what to do now?  Something a bit more creative and using different flavors than bread with turkey and gravy on it is ....turkey enchiladas.  This is one of my families favorite ways to use left over turkey.  it's very simple and just like you would do with ground beef or chicken.

Ingredients

  • 2 cups shredded Cheddar and Monterey cheese blend
  • 1 onion, chopped
  • 1 (2 ounce) can sliced black olives
  • 1/2 cup cilantro
  • 24 (6 inch) corn tortillas or flour tortillas
  • 1 (19 ounce) can red enchilada sauce
  • 4 cups cooked turkey, chopped
  • sour cream

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  2. In a small bowl, combine the cheese, onion, cilantro and black olives.
  3. In a small skillet, heat enough oil to lightly coat one tortilla, and cook until soft. Remove and dip in enchilada sauce to coat.
  4. Add turkey and cheese mixture to center of tortilla, roll and place in the prepared dish. Repeat until bottom layer of pan is covered with enchiladas. Spread enough sauce over bottom layer to cover.
  5. Repeat process with a second layer; spread remaining sauce on top and sprinkle with remaining cheese mixture. Bake 20 minutes in the preheated oven, or until cheese is melted.

spaghetti squash "spaghetti"

      I have talked about lots of sweets that are fall related, with the  pumpkin cookies, caramel apples, apple cider etc... but how about the other crops that are amazing in the fall ....Squash.
  A squash that I never had until about a year ago was spaghetti squash.  I think the easiest way to cook it is whole and on a baking sheet at 375 for about an hour depending on the size of your squash.  Once I tried to cut it raw and cook it cut in two, but it was so hard to cut. Cooking it first and it is like cutting butter when it has baked for an hour.  Then scrap out seeds and test squash if it is still hard then put it back in over and continue cooking for about 20 minutes or so until soft and tender. 

   I have to tell you then night before I tried this the first time I honestly laid in bed trying to imagine how this squash would turn into noodles it literally boggled my mind.  Then once I ran my fork through it , it was completely different than how I had imagined, but so cool.  Really it is like magic.
I like to top mine with spaghetti sauce just like I would noodles.You can do with meat or without. It is delicious and a great way to save the pasta and go  lighter and more nutritious.  It is a really nice alternative to pasta, and when you eat your spaghetti this way you don't have to feel bad about that nice slice of bread you are having on the side, because you aren't doubling up on your carbs.

My kids ate this so fast they both had two bowls...   Also for anyone with gluten allergies this is a great substitution for  wheat products.  My little boy is allergic to almost everything under the sun, it was nice not to have to cook him his own type of noodle.  
Next time you are in the store pick up a spaghetti squash and try it for yourself!

  Preheat oven to 375.
Bake squash for one hour or until tender
scrap insides with fork after removing seeds. season squash.
top with sauce.  can make a meat sauce if you desire.

Baked mexican fish

Thanks everyone for all your support and nice comments yesterday for our featured apples over at HowDoesSHe.com. It was fun.

Years ago when we were first married I was looking for recipes anywhere I could find them at.  One day I bough pre-wrapped  fresh salmon from the deli at the store.  Under the wrapper it had this recipe. I  gave it a try. We loved it and my not fish loving husband said you can not even tell there is fish under there. I have made some modifications over the years but it is still one of our favorite ways to eat fish and most importantly a way to feed it to non fish lovers. It couldn't be easier too. You take your favorite fish I used it on cod, talapia, but our favorite is salmon,  cover it with salsa (you choose the heat,  if for a family with little ones choose a milder one or one with fruit in it I love the mango salsa from Costco) then cheese, then crushed tortilla chips....bake =delicious.  It keeps the fish moist and flavorful. You have to try this.  I love to serve it with sliced avocados or a lime cilantro mayo sauce. and brown rice and black beans.

Ingredients    this will serve 4- 6 people
1 and a half pounds fish fillets
1 cup salsa
1 cup shredded cheese (Cheddar or pepper jack are my favorite)
1/2 cup coarsely crushed corn chips

 directions
  1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease one 8x12 inch baking dish.
  2. Rinse fish fillets under cold water, and pat dry with paper towels. Lay fillets side by side in the prepared baking dish. Pour the salsa over the top, and sprinkle evenly with the shredded cheese. Top with the crushed corn chips.
  3. Bake, uncovered, in the preheated oven for 15 minutes, or until fish is opaque and flakes with a fork. Serve topped with sliced avocado and cilantro lime mayo. 
Recipe for sauce
1 cup (packed) fresh cilantro leaves
3 tablespoons fresh lime juice
1 garlic clove, peeled
1/4 teaspoon hot pepper sauce
3/4 cup mayonnaise 

 Preparation
put all in but mayo blender or food processor til all cilantro is chopped fine than add mayo and mix til combined. season with salt and pepper
Mix all together refrigerate til used. can be made up to one day in advance.

brown sugar meatloaf

 I  grew up having meat loaf fairly often at my home and I liked but, my husband, not so much.  So when we were first married and I made it for him he was not impressed.  So I searched for a meatloaf recipe he would like.  I found this one on Allrecipes.com years ago  it is the highest rated meatloaf recipe on there and for good reason.   When I read the words sweet glaze I knew I would have him hooked.   I have made a few modifications to the original recipe over the years,  for example they said to put the glaze on the bottom, but I find it is much better on top.  Try it out and surprise a meatloaf hater out there how good and sweet it can be....
 “This tasty meatloaf flavored with ginger, has a sweet brown sugar and ketchup glaze.”

Ingredients:
1/2 cup packed brown sugar
1/2 cup ketchup
1T Worcestershire sauce
1 1/2 pounds lean ground beef
1/2 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
2 cloves of garlic, chopped
1/4 teaspoon ground ginger
3/4 cup seasoned bread crumbs

Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. on a cookie sheet form mixture in middle of pan as a loaf. That way it does not cook in ts own grease.
3.In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf.
4. Pour the brown sugar, ketchup, Worcestershire sauce mixture over loaf.  
5.Bake in preheated oven for 1 hour or until juices are clear.  


If you do not want to wait an hour you can always place them in muffin tins and cook for 30 minutes  instead and you have individual servings.

4 step chicken

I have mentioned that I love Melissa d'Abrabian .  This was the recipe she showed on her show a while ago.  I made it then and loved it and I have made it a ton since then with different additions it is  a very versatile.  It is so lemony and delicious.  I could drink the sauce.  I like to serve it over brown rice with some other vegetable.  When I serve it over rice I double the sauce.  I also added mushrooms,  again they are so good for you and I love them and so do my kids  they honestly fight over them and eat them first off their plates.  don' let my very caramelized brussel sprouts deter you they were good too.  it was a fun way to try vegetable we do not eat often.  i will post them later.

Ingredients

  • 4 boneless, skinless chicken breast halves, sliced in half crossways (butterflied, cut all the way through)
  •  plus 1 small bunch fresh thyme, leaves chopped
  • Salt and freshly ground black pepper
  • 4 tablespoons olive oil
  • 1/4 cup all-purpose flour
  • 1 large red onion, thinly sliced
  • 1 pound baby bella mushrooms
  • 1/2 cup white wine, optional (if no wine increase your broth)
  • 1 cup chicken broth
  • 3 lemons, juiced
  • 1 to 2 tablespoons butter

Directions

Season chicken with dried thyme and salt and pepper. Heat a large saute pan over medium heat and add the oil. Dredge the chicken in flour, add to the hot oil and saute until cooked through. Set chicken aside to rest on plate tented with foil.
In same saute pan, over low heat, add onions and fresh thyme, quartered mushrooms and cook until aromatic.
In a measuring cup, measure out wine, if using, and broth, and add the lemon juice. Turn the heat up to high, and deglaze the pan with the broth mixture until starting to reduce.
Remove the pan from the heat and finish the sauce by whisking in butter. Season with salt and pepper, to taste.
Place a bed of cooked spinach on a serving platter or rice, top with the chicken. Spoon the sauce over the chicken and serve.

Baked Ziti

Months ago I made this one night when I had a large crowd coming over for dinner and a friend of mine just had surgery. They all loved it adults and kids and wanted the recipe.  so here I am 4 months later coming through with my promise!

This makes a huge 9X13 dish.  if it is only your small family you may want to cut it in half.  Even though we are a small family I always make big dishes we love leftovers for lunches the next day or a quick dinner if we are short on time.  Luckily my husband thinks it is great when we have leftovers and enough for dinner the next night I finally caught onto why he thought this....  He watches the kids while I cook.  If I do not have  to cook, he does not have to watch the kids.  now I am onto his tricks I will have to think of a new time for him to entertain the while I am busy doing my thing.

It is a great dinner with simular taste as lasagna only easier the cheese and sour cream add a great and unexpected tang.  add green beans or a salad and you have a great meal



1 pound dry ziti pasta ( I always use whole wheat, you cannot even tell)
1 onion, chopped
1 pound  ground meat. I love Italian sausage or turkey it gives more flavor
2 (26 ounce) jars spaghetti sauce
6 ounces provolone cheese, sliced
1 1/2 cups sour cream
6 ounces mozzarella cheese, shredded
2 tablespoons grated Parmesan cheese
Directions:
1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
2. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
3. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.
4. Bake for 30 minutes in the preheated oven, or until cheeses are melted.

    It is officially fall around here beautiful changing leaves, crisp mornings and chili season!!   I love soups and chili's I love when I can get away with cooking them a few times a week for dinner.
     This weekend we had a fall social with the adults of our church and we all brought chili.  There are so many different variations of chili, to very meaty, no bean, vegetarian, no tomatoes white, chicken.....
   When I make things like this  and soups I clean out my fridge and throw lots of stuff I think would work well together.   It might seem like a lot of ingredients but customize it to fit you and what you like. Today I will show you one that is our staple chili.  It is not the most ordinary, but neither and I.  Mine is secretly full of veggies, that taste great give good texture and of course nutrition.
   I opted for ground turkey because it is lighter than beef and I only did one pound with lots of beans (so good for you) and a few veggies. ( most people may not do mushrooms in their chili, that is how we made it growing up, I like them, I do less meat so this gives it more of a meaty feeling and great flavor, and my kids love them, even fight over them) Even picky eaters with not find them in all the goodness.  Especially if they get to eat it with chips.  In my house chips with big scoops on top are like the magic utensil for eating things  they would not normally want to.

 Ingredients
  • 2 tablespoons vegetable oil 
  • 1 large onion, finely chopped
  • 2 bell peppers, diced ( I used red but you can use whatever color you have on hand)
  • 1 pound mushrooms ( I used baby bellas) chopped
  •  2 stalks celery finely diced
  • 1 pound ground turkey (trying to keep it healthier)
  • 1Tb mexican reasoning
  • 1T chili powder
  • 1T ground cumin
  • 2 tablespoons tomato paste
  • salt and pepper to taste.
  • 1 (14.5 ounce) can beef broth or water
  • 1/2 cup favorite salsa
  • 2 (14.5 ounce) can crushed tomatoes, or coarsely chopped tomatoes packed in puree
  • Juice of one lime
  • 2 T brown sugar. 
  •  1 can kidney beans, rinsed
  •  1 can pinto, rinsed
  • 1 can northern beans, rinsed (use any variety of beans you like)  Tip: check consistency and add water if needed and put on lid   or if too  liquidy keep your lid off and the chili will cook down.

    Directions:  Saute onion, bell peppers, celery, mushrooms in oil, until tender then move to side brown turkey, add seasonings, tomatoes and beans etc...  simmer on low for 30 minutes to an hour or put in the crock pot and let it go all day.

    Then for the fun part, garnishes   we love cut up avocados. sour cream, cilantro, green onions, and chips and of course cheese.  Go ahead be as naughty or as nice as you like and of course enjoy!!!

Chicken and Spinach Stuffed Shells

These are great stuffed shells they have great flavor and are liked by all. It was a bit time intensive to prepare, but if you made the filling ahead of time it goes much faster. I also used a zip-lock gallon bag with a snipped corner to put my filling in. Much easier!! I love meals like this that are great to be frozen and eaten whenever.

This recipe makes two 9x13 pans perfect for sharing one with a sick friend or neighbor, or someone who just had a baby. In our house this is one of our favorite things to do. when ever my son parker sees me making something big or treats of any kind he asks if someone have a baby, or if someone is sick, or died.... It is cute, but I am mainly glad I am teaching him that it is good to serve and share with others. I always make it a point to take him with me when I can to help deliver the food so he can experience the feelings of service too.
Nothing warms the soul like a delicious meal made by someone thinking of them!

44 uncooked jumbo pasta shells (That’s about one and one-half 12-oz boxes)
2 c chopped cooked chicken
2 c fresh chopped spinach
1 onion, chopped
2 cloves garlic, minced
1 (15oz) container ricotta cheese
2 (8oz) packages cream cheese, softened
1 (5oz) package shredded Parmesan cheese (about 1 2/3 c.)
1 large egg, lightly beaten
1 Tb dried parsley flakes
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp pepper
2 c shredded mozzarella cheese, divided
1 (26oz) jar prepared spaghetti sauce (any variety)

Cook shells according to package directions (be sure to stir every once in awhile so they don't stick to the bottom of the pan and tear apart); drain and set aside.
Preheat oven to 350°. Lightly grease 2 13x9x2inch baking dishes.
In a large bowl, combine chicken and all the rest of the ingredients except mozzarella and spaghetti sauce. Stir in 1 cup mozzarella. Spoon into shells. Spread half of spaghetti sauce into prepared baking dishes. Arrange shells over sauce; top with remaining sauce. Cover tightly with heavy-duty aluminum foil. Bake, covered, for 40 minutes. Uncover, sprinkle with remaining 1 cup mozzarella. Bake for 5 to 10 more minutes.
Makes 8-10 servings.

Quinoa with black beans


Quinoa (pronounced Keen – wah)

I made this for dinner tonight and it was scarfed down by everyone!!! so tasty and it made it even better to know how good it was for us.
Ingredients:
1 teaspoon vegetable oil
1 onion, chopped
3 cloves garlic, peeled and chopped
1 cup uncooked quinoa
1 1/2 cups broth
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
salt and pepper to taste
1 cup frozen corn kernels (or one can corn)
2 (15 ounce) cans black beans, rinsed and drained
1 can diced tomatoes

Juice of one lime
1/2 cup chopped fresh cilantro
garnish with avocado or FF sour cream
1/2 cup chopped fresh cilantro

Directions:

first start by soaking Quinoa in water. before you add it to your sauce pan rinse very well and drain.
1. Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.

2. Mix quinoa into the saucepan and cover with broth. Season with cumin, cayenne pepper, salt, and pepper. Add canned tomatoes (drained) Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,
3. Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro and lime juice.

For most, quinoa is known as a type of grain, not entirely true though. If you want to get technical, Quinoa is actually a seed; it is referred to as a grain because of its cooking characteristics.

Quinoa has a very delicate flavor and a lovely texture. People have said it is similar to couscous – I disagree. The texture is soft, yet there is slight bite from the spiral tail of the quinoa. Spiral tail? Yes, as quinoa cooks the outer germ around each grain twists to form a white spiral tail. This tail is what gives it a pleasant bite or crunch. The texture combination is why I love quinoa – it is heartier, more nourishing than other grains. And thanks to its recent exposure in cooking magazines and shows, you can easily find quinoa at most supermarkets and at natural foods stores.


Quinoa is high in fiber, calcium and iron, low in fat and is very easy to digest. Compared to other grains, quinoa is the highest in complete protein which makes it an ideal ingredient for vegetarians. Quinoa is so nutritious in fact, that it was used to sustain Incan armies who would march for several days on a simple mixture of quinoa and fat, or “war balls” as they called them. As I stated previously, quinoa is an ancient grain; records show that quinoa has been cultivated in the South American Andes since around 3000 BC. Quinoa has only been grown outside of South America for a relatively short period of time. In the US, most quinoa comes out of Colorado.

So, how do you cook this stuff? I cook my quinoa in a saucepan, a 2:1 ratio of liquid to quinoa. For the liquid, I usually substitute stock for water as the grains absorb so much of the flavor. Rinse your quinoa before cooking to remove any leftover residue. I bring my stock up to a boil, add the quinoa and reduce the heat to the lowest setting and cover. I usually let it sit for about 10-15 minutes until the liquid is absorbed. Then I fluff with a fork and set aside. Don’t worry too much if there is a bit of excess water on the grains – it tends to evaporate as it sits. If you feel compelled, you can always drain in a wire strainer. I suggest reading the instructions on your box as each variety of quinoa cooks differently. Trial and error works best when cooking quinoa.

garlic lime chipotle pork chops.


The other night I was making dinner for a dear friend of mine who had surgery. She and her husband eat low calorie low fat foods. I knew it was very similar to Weight watchers diet. So I began searching for recipes and I cam across this one from Ginas weight wathcers recipes.
I mainly stuck to the recipe but I wanted a bit more spice so I added one chipotle pepper in adobo sauce chopped up finely and mash it with my knife until it creates a paste. They are really hot but if you create a paste of it it adds a nice heat and smokey flavor. Also I had some orange pineapple juice in my fridge so while I let it marinate I decided to add that to give some more liquid so it would cover the surface more evenly.
Garlic Lime Chipotle Pork Chops
The lime zest gives these chops an extra zing. Adjust the seasoning to your liking. Make these in the broiler or on the grill. Serve this with cilantro lime rice on the side.
Servings: 4 • Cook Time: 8-10 minutes Points: 6 ww points
  • 4 (6 oz) lean boneless pork chops
  • 4 cloves garlic, crushed
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 lime, juiced
  • chipotle pepper in adobo sauce, mashed into a paste
  • lime zest
  • 1/3 cup citrus juice ( I used orange pineapple juice)
  • salt and fresh pepper
Trim any fat off pork. In a large ziploc bag season pork with garlic, cumin, paprika, juice, chipotle pepper paste, salt and pepper. Squeeze lime juice and some zest from the lime and let it marinade at least 30 minutes.

Line broiler pan with foil for easy clean up. Place pork chops on the broiler pan and broil about 4-5 minutes on each side or until nicely browned.
my pork chops had bones in them and took a bit longer to cook, but I kept waiting for it to really brown and that did not happen for me, do not wait for them to look like a steak.. it will not happen and if it does you sure will be sorry and so will your jaw.

beef it's what's for dinner


I found this recipe on one of my favorite food blogs ever The Pioneer woman cooks.  This lady is truly amazing I am sure you love her too... whats not to love,  But if you have not been introduced yet, hop on over and give her some love!!!   She made these shortribs and they looked so good I had to tonight for dinner and serve with polenta. yum.They are moist and delicate and tender and so flavorful. t he best way to eat short ribs!!!

Braised Short Ribs

Prep Time 20 Minutes
Cook Time 2 Hours Servings 4 Difficulty Easy
Ingredients

* 8 whole Beef Short Ribs
* Kosher Salt & Pepper To Taste
* ¼ cups All-purpose Flour
* 6 pieces Pancetta, Diced
* 2 Tablespoons Olive Oil
* 1 whole Medium Onion, Diced
* 3 whole Carrots, Diced
* 2 whole Shallots, Peeled And Finely Minced
* 2 cups Red Or White Wine
* 2 cups Beef Or Chicken Broth (enough To Almost Cover Ribs)
* 2 sprigs Thyme
* 2 sprigs Rosemary

Preparation Instructions

Salt and pepper ribs, then dredge in flour. Set aside.

In a large dutch oven, cook pancetta over medium heat until complete crispy and all fat is rendered. Remove pancetta and set aside. Do not discard grease.

Add olive oil to pan with the pancetta grease, and raise heat to high. Brown ribs on all sides, about 45 seconds per side. Remove ribs and set aside. Turn heat to medium.

Add onions, carrots, and shallots to pan and cook for 2 minutes. Pour in wine and scrape bottom of pan to release all the flavorful bits of glory. Bring to a boil and cook 2 minutes.

Add broth, 1 teaspoon kosher salt, and plenty of freshly ground black pepper. Taste and add more salt if needed. Add ribs to the liquid; they should be almost completely submerged. Add thyme and rosemary sprigs (whole) to the liquid.

Put on the lid and place into the oven. Cook at 350 for 2 hours, then reduce heat to 325 and cook for an additional 30 to 45 minutes. Ribs should be fork-tender and falling off the bone. Remove pan from oven and allow to sit for at least 20 minutes, lid on, before serving. At the last minute, skim fat off the top of the liquid. (Can also refrigerate mixture, then remove solid fat from the top.)

Serve 2 ribs on bed of creamy polenta, spooning a little juice over the top.

Crispy-Skinned Chicken a l'Orange


I made this last night it was so easy and delicious. This recipe is from the girl who won the next food network star. she has a great new show called $10 dinners, where she make a complete dinner for a family of four for $10 or less. I made this for $3.00 plus our sides which only came to $1.50 mashed potatoes with glazed carrots.

Ingredients

* Kosher salt and freshly ground black pepper
* 3 skin-on bone-in chicken breast halves
* 1 tablespoon vegetable oil
* 1/2 cup frozen orange juice concentrate
* 4 tablespoons honey

Directions


Preheat the oven to 375 degrees F.

Liberally salt and pepper the chicken breast halves. Heat the oil in a large saute pan over medium-high heat and sear the chicken, skin side only, until brown and beginning to crisp, about 5 minutes.

Meanwhile, make the orange glaze: In a small saucepan, heat the orange juice concentrate, honey, and salt and pepper, to taste, over medium heat, and boil for 3 minutes. Remove from the heat.

Turn the chicken over and brush each piece with the glaze. Turn the chicken skin side up and transfer the pan to the oven. Bake until the internal temperature reaches 160 to 170 degrees F on an instant-read thermometer, brushing on more glaze halfway through, about 15 minutes in total. Let the chicken rest for 10 minutes on a cutting board. Remove the chicken breast from the bone and slice the meat on the bias. Transfer the chicken to a serving platter and serve.
